Dear Gourmet Lover,

Have you ever wondered if there was a way to deal with long queues, expensive food prices, and having to cope with your child's (and maybe your big baby partner's) silly tantrums to eat White Castle Burgers?

Ever looked on enviously at how your friends and neighbors manage to whip up a solid grill during their parties, BBQs and gatherings, and how your kids (or maybe your big baby partner) run over with some excuses so they can grab some of that chow? 

Well, I know how you feel. As a kid I always wished I had access to KFC or solid, wood fired pizzas all day long. I always had to wait till maybe once or twice a week so that dad would drive us out to town to eat.  

Over the years, mum tried to mimic how the big restaurants were cooking their magnificent dishes. Once in a while, we would takeaway our favorite grilled steak and ribs home so that the 'chief of our kitchen' could do her experiments!

But despite coming out with delicious, honest to goodness chicken, grills and crunchy, fresh salads, mum could never replicate the exact taste of Tony Roma's Ribs, Grilled Chicken of Nandos or the Burritos of Taco bell.

She was disappointed but I knew she did it with all her heart to please me. So I consoled her saying it was not a life and death thing, although I did wish there was an 'underground' way to obtain these solid, mouth watering recipes.

Fast forward to 2006...

During one of my networking sessions and parties, I met a young cook who could copy loads of dishes the exact way that the big restaurants and some fast food joints did. 

He would take a bite out of a piece of chicken or honey bourbon rib, chew it, pause, then start writing down all the ingredients, after which he would experiment by grilling the meat at various temperatures.

Ironically, despite his skills, he was not eager to set up his own restaurant or work in a 5 star hotel. He was looking to make a living through the Internet, so he wouldn't have to work Sundays!

So I sat down with him and suggested something different: He would 'reverse engineer' the dishes of top American restaurants and recreate the winning recipes, allowing people who love the solid, flavorful goodness of these meals to create them in the comfort of their own home!
